Zesty Green Salad with Zespri® Kiwifruit
This salad is a delicious combination of tangy beetroots in red wine vinegar, crunchy fresh greens and sweet pops of juiciness from Zespri SunGold Kiwifruit.
- 1 Zespri SunGold Kiwifruit, Sliced
- 2 Handfuls of Spinach
- 5 slices of Vinegared Beetroot
- 1 Hardboiled Egg
- Juice from ½ Zespri Green Kiwifruit
- 2 teaspoons of Extra Virgin Olive Oil
- Sea Salt and Black Pepper
Recipe by Breakfast and Salads:
- Mix juice from Zespri® Green Kiwifruit and Extra Virgin Olive Oil till well combined.
- Place salad ingredients on a plate and drizzle dressing on it.
- Sprinkle with sea salt and cracked black pepper to serve.
