Zespri SunGold Kiwifruit, Rocket, Mustard and Almond Salad
Ingredients
Salad
- 2 Zespri SunGold Kiwifruit (1 quartered, 1 diced)
- 2 small heads of mixed salad greens and rocket
- 20 roasted almonds
honey mustard dressing
- 1 tbsp honey
- 4 tbsp olive oil
- 1 tsp whole-grain mustard
- 1 tbsp lemon juice (or 1 tsp vinegar)
- ¼ tsp salt
2 servings, ⏲ 10 minutes

Directions

Peel the skin of one Zespri SunGold Kiwifruit and cut into quarter slices about 1cm thick.

Mix in rocket, salad greens and almonds.

Put ingredients into a bowl and mix. Dress the salad. Sprinkle chopped almonds and one diced Zespri SunGold Kiwifruit on the salad.

Serving suggestion: Add asparagus and tomatoes.
