Zespri® SunGold Kiwifruit Chicken Rendang
- 10 g ginger
- 10 g galangal
- 3 stalks lemongrass
- 5 shallots
- 3 cloves garlic
- 15 dried chillies
- 80 g oil
- 700 g chicken
- 600 g coconut milk
- 130 g kerisik
- 3 pcs kaffir lime leaf, sliced
- 1 turmeric leaf, sliced
- ½ tsp salt
- ½ tsp sugar
- 2 Zespri® SunGold Kiwifruit, diced
Preparation time: 20 minutes
Cooking time: 1 hour
Place ingredients A in a blender and blend until smooth.
Heat up a wok and stir fry the blended ingredients until fragrant, then add in chicken and coconut milk.
Simmer on low heat for 30 minutes, stirring in between.
Add in kerisik and cook until gravy thickens.
Add the sliced lime leaves and turmeric leaf and cook for another 3 minutes.
Season to taste with salt and sugar.
Add Zespri® SunGold Kiwifruit and cook for another 3 minutes on medium heat.
