Zespri® Organic SunGold Kiwifruit and Yoghurt Muffins
- 1 – 2 (150g) Zespri SunGold Organic Kiwifruit, peeled and diced
- 220g plain organic flour, sifted
- 2 ½ tsp baking powder
- ½ cup caster sugar
- 1/8 tsp salt
- 1 egg
- ¾ cup vegetable oil or rice bran oil
- ¾ cup organic yoghurt
Preheat oven to 180°C.
Mix together flour, baking powder, caster sugar and salt.
In separate bowl, mix together egg, oil and organic yoghurt. Pour wet ingredients into dry ingredients and add Zespri SunGold Kiwifruit dices. Mix lightly.
Line muffin tin with baking paper and add mixture. Bake for 20 – 25 minutes or until they turn Golden brown.
